Super supper!

We all struggle with ideas for family mealtimes that everyone enjoys and are simple to prepare, so when I tried these delicious spinach and quinoa patties at a friend's house last weekend, I knew I had found a new addition to my midweek meal repertoire!

 

Sometimes its hard to get kids to eat more veg, but with the liberal use of spinach in this tasty dish, they won't realise how good it is for them!

 

Spinach is extremely nutrient-dense. It is an excellent source of vitamin K, carotenes, vitamin C and folic acid. It also contains magnesium, iron, vitamins B6, B2, B1 and E. This means it can be beneficial for people who want to support bone health, energy levels and eye health. 

 

Ingredients:

1 bag of frozen spinach (thawed) - the one I used weighed 900g

1 cup cooked quinoa (regular readers of this blog will know that I always have this to hand as I use it in packed lunches!)

2 eggs

3 tbsp milled flaxseeds

1 tbsp ground cumin

2 cloves garlic, crushed

salt and pepper

 

Method:

Once the spinach has thawed, chop it up into smaller pieces. Then, mix all the ingredients together and shape into patties.

Arrange on a baking tray and bake in a moderate oven (180ºc) for about 30 minutes, turning them over halfway through baking.
