The apple of my eye

I love making tasty treats for when my kids have friends round, and it is even more enjoyable when the friends make positive comments about the "healthy cakes"!

Here is a great recipe for apple muffins with a crumble topping. It made 9 large muffins.

  • 225g wholemeal flour

  • pinch of sea salt

  • 1 tbsp baking powder

  • 1 tbsp ground flaxseed

  • 40g xylitol

  • 4 tbsp olive oil

  • 2 red apples, keep skin on, grated

  • 160ml dairy free milk

  • 1 tsp ground cinnamon

Crumble topping

  • 1 tbsp xylitol

  • 30g oats

  • ¼ tsp ground cinnamon

  • 1 tbsp olive oil

  1. Line a muffin tin with paper cases

  2. Preheat the oven to 190ºC, gas mark 5

  3. Place the flour, salt, baking powder, flaxseed and xylitol in a large bowl and mix together.

  4. Add the remaining ingredients and mix well.

  5. To make the topping simply mix all the ingredients together in a small bowl

  6. Spoon the batter into the cases and top with a little of the crumble topping

  7. Bake in the oven for 20-25 minutes or until firm to touch and golden

  8. Transfer to a wire rack and allow to cool.
