The apple of my eye
I love making tasty treats for when my kids have friends round, and it is even more enjoyable when the friends make positive comments about the "healthy cakes"!
Here is a great recipe for apple muffins with a crumble topping. It made 9 large muffins.
225g wholemeal flour
pinch of sea salt
1 tbsp baking powder
1 tbsp ground flaxseed
40g xylitol
4 tbsp olive oil
2 red apples, keep skin on, grated
160ml dairy free milk
1 tsp ground cinnamon
Crumble topping
1 tbsp xylitol
30g oats
¼ tsp ground cinnamon
1 tbsp olive oil
Line a muffin tin with paper cases
Preheat the oven to 190ºC, gas mark 5
Place the flour, salt, baking powder, flaxseed and xylitol in a large bowl and mix together.
Add the remaining ingredients and mix well.
To make the topping simply mix all the ingredients together in a small bowl
Spoon the batter into the cases and top with a little of the crumble topping
Bake in the oven for 20-25 minutes or until firm to touch and golden
Transfer to a wire rack and allow to cool.
