Comfort food that's good for you!

Who says that warming, comfort food is bad for you?

I gave an old favourite a nutritional upgrade: Fish pie!

This dish is relatively easy to put together. Turn on the oven and put about 500g of smoked haddock in an oven dish ( I used a large rectangular one). Season with some black pepper and lemon juice. Bake for about 20 minutes until cooked.

Meanwhile, in a large saucepan, boil about 500g potatoes (unpeeled, scrubbed and chopped into chunks) and 3 carrots (diced). About 20 minutes into cooking, add a head of broccoli that has been cut into florets and about 200g frozen peas into the same pan. Cook until softened but still with some bite. Drain all the vegetables.

Stir all the vegetables into the fish in the oven proof dish. I added a little milk and butter to make it creamy as it cooked. I also added some dried tarragon and dill. Sprinkle the whole lot with some psyllium husk and dot it with a little cheese to give it crowd appeal. If you don't have psyllium husk, then you can use breadcrumbs, ground flaxseeds or something similar.

Bake for about 20-30 minutes - even my reluctant fish-eater ate this one! You could make changes by substituting the smoked haddock with salmon or a white fish. You could also make changes to the vegetables according to your preference.

This dish has got it all - protein, carbohydrate, fibre, fat and lots of vegetables - it's WIN WIN!!!
