Sweet treat

I love healthy recipes and I love simple recipes, and this one ticks both boxes, so I am delighted to share it with you. It is so quick to make that it literally takes longer to weigh out the ingredients than it does to do the method! It is also gluten-free and contains no refined sugar, but there is certainly a lot of natural sugar from the dried fruit and honey.

Ingredients: you can replace with other types of dried fruit if preferred

· 75g dried apricots, roughly chopped

· 75g dates, pitted and roughly chopped

· 75g sultanas

· 75g cranberries

· 75g brazil nuts, halved

· 75g pecans, roughly chopped

· 75g ground almonds

· 1 tsp cinnamon

· ½ tsp baking powder

· 2 eggs

· 1 tbs honey

1. Preheat the oven to 150ºc, gas 2

2. Mix dried fruit, nuts, ground almonds, cinnamon and baking powder in a bowl

3. In a separate smaller bowl, mix eggs and honey. Add to the fruit and nut mixture.

4. Line a 2lb loaf tin with greaseproof paper, pour in the mixture and press down firmly

5. Bake for 1 hour, remove from the oven and leave to cool in the tin
